- Puree the lime juice, white vinegar, chili powder, cumin, salt, pepper, pineapple, red onion, and chipotle peppers in a blender. Stir in the beer.
- In a slow cooker, combine the pork and the pineapple mixture. Cook on low for 6-8 hours, or until the pork is very tender.
- Stir the cilantro into the mango salsa.
- Break up the pork with a fork. Serve the pork mixture in warm tortillas. Add the salsa and your desired toppings.
