  • 3 ripe bananas mashed or 1 1/2 cups mashed
  • 1.5 cups all-purpose flour or oat flour
  • 2 eggs
  • 1/4 cup maple syrup or honey
  • 1 tsp baking soda
Optional Flavorings
  • 1/2 tsp cinnamon
  • 1/4 tsp salt
  • 1/2 cup mix-ins e.g., chopped walnuts, pecans, chocolate chips, raisins

Method
 

  1. Preheat your oven to 350°F (180°C). Line a 9x5-inch loaf pan with foil or parchment paper and spray with cooking spray.
  2. Add all the main ingredients to a blender and blend until smooth. Pour the batter into the prepared loaf pan. If you are using any optional mix-ins, stir them in now, or sprinkle toppings on top.
  3. Bake for 45-50 minutes, or until a toothpick inserted into the center comes out clean. Baking time can vary by oven, so check around 25-30 minutes if it's your first time making this recipe.
  4. Let the banana bread cool completely before slicing and serving.
  5. Store the banana bread in an airtight container on the counter for up to 3 days, or in the refrigerator for up to a week.
