Ingredients
  

Chicken
  • 2 pounds chicken thighs bone-in skin-on
  • 1 teaspoon salt or to taste
  • 1 teaspoon black pepper or to taste
Sauce
  • 2 tablespoons olive oil
  • 1 tablespoon whole grain dijon mustard
  • 1 tablespoon mustard
  • 2 tablespoons honey
  • 6 cloves garlic minced
  • 1/4 teaspoon red pepper flakes

Method
 

  1. Preheat your oven to 425℉.
  2. Place the chicken thighs in a bowl and season them generously with salt and pepper.
  3. Whisk all the sauce ingredients together in a small bowl.
  4. Pour the sauce over the thighs and toss them well to coat.
  5. Transfer the chicken thighs to a 9×13 inch baking dish, including any remaining sauce. You do not need to grease the dish.
  6. Transfer the baking dish to the oven and bake for about 35 minutes, or until the chicken thighs have an internal temperature of 165℉ and the skin is crispy.
  7. Transfer the chicken to a serving plate, cover with aluminum foil, and let it rest for 10 minutes before serving.

Notes

Use bone-in, skin-on chicken thighs for the best flavor and crispy skin. If using boneless, skinless thighs, reduce the bake time to around 25 minutes. The glaze is a perfect balance of sweet, tangy, and a little heat. Ensure the chicken reaches an internal temperature of 165°F for safety, or up to 175°F for extra crispy skin. For more spice, add a pinch of cayenne or extra red pepper flakes. Double the sauce if you plan to serve with rice or mashed potatoes, as it is very flavorful.
