This easy ground beef and potato skillet is a simple, satisfying meal perfect for busy weeknights. It uses just a few ingredients and comes together quickly for a delicious dinner solution.

Ingredients
  

  • 1 pound ground beef
  • Salt and pepper
  • 1 1/2 cups beef broth (or 1 1/2 cups water with 1 1/2 tsp beef bouillon base)
  • 2 pounds Russet potatoes peeled and cubed
  • 1 cup sour cream (or 1 can cream of mushroom soup)
  • 1 cup shredded cheddar cheese
Optional additions
  • 1 Tbsp Worcestershire sauce
  • 1/2 tsp garlic powder

  • Steamer basket

Method
 

  1. Turn Instant Pot to sauté setting. When display says hot, add the ground beef and break it up. Brown for about 5 minutes. Drain any excess grease. Lightly salt and pepper the meat. Pour in the beef broth and scrape the bottom of the pot to ensure nothing is sticking. Turn off Instant Pot.
  2. Add the cubed potatoes to a steamer basket and lower the basket into the pot on top of the meat and broth. Cover and lock the lid into place. Set the valve to sealing. Set the manual/pressure cook button to 5 minutes. When time is up, move the valve to venting. Remove the lid. The potatoes should be soft when pierced with a fork.
  3. Dump the cooked potatoes into the pot with the meat mixture. Stir in the sour cream, shredded cheddar cheese, and optional Worcestershire sauce and garlic powder. Season with additional salt and pepper to taste. The sauce will thicken as it sits.
  4. Serve hot and enjoy your simple, delicious meal!

Notes
