Air Fryer Stuffed Peppers

These air fryer stuffed peppers are a quick and easy weeknight meal. They are filled with seasoned ground beef and topped with cheese.

Ingredients
  

For the Peppers
  • 4 Bell peppers any color, tops removed, seeds and membranes removed
For the Filling
  • 1 lb Ground beef
  • 1 small Onion finely chopped
  • 2 cloves Garlic minced
  • 1 tsp Italian seasoning
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 1/2 cup Cooked rice
  • 1/4 cup Tomato sauce
  • 1 cup Shredded cheddar cheese

  • Air fryer
  • Large skillet

Method
 

  1. Prepare the peppers: Cut off the tops of the bell peppers, remove the seeds and membranes. Rinse them out.
  2. Cook the filling: In a large skillet, brown the ground beef over medium-high heat. Drain off any excess fat.
  3. Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute more until fragrant.
  4. Remove the skillet from the heat. Stir in the cooked rice and tomato sauce.
  5. Stuff the peppers: Spoon the beef mixture evenly into the prepared bell peppers.
  6. Air fry the peppers: Place the stuffed peppers in the air fryer basket. Cook at 375°F (190°C) for 15-20 minutes, or until the peppers are tender and the filling is heated through.
  7. Top with cheese: In the last 2-3 minutes of cooking, sprinkle the shredded cheddar cheese over the top of each pepper. Continue air frying until the cheese is melted and bubbly.
  8. Serve hot.

Notes

You can substitute ground turkey or chicken for the ground beef. Add other vegetables like corn or diced tomatoes to the filling for extra flavor and texture.
