- Prepare the peppers: Cut off the tops of the bell peppers, remove the seeds and membranes. Rinse them out.
- Cook the filling: In a large skillet, brown the ground beef over medium-high heat. Drain off any excess fat.
- Add the chopped onion to the skillet and cook until softened, about 5 minutes. Stir in the minced garlic, Italian seasoning, salt, and pepper. Cook for 1 minute more until fragrant.
- Remove the skillet from the heat. Stir in the cooked rice and tomato sauce.
- Stuff the peppers: Spoon the beef mixture evenly into the prepared bell peppers.
- Air fry the peppers: Place the stuffed peppers in the air fryer basket. Cook at 375°F (190°C) for 15-20 minutes, or until the peppers are tender and the filling is heated through.
- Top with cheese: In the last 2-3 minutes of cooking, sprinkle the shredded cheddar cheese over the top of each pepper. Continue air frying until the cheese is melted and bubbly.
- Serve hot.
Notes
You can substitute ground turkey or chicken for the ground beef. Add other vegetables like corn or diced tomatoes to the filling for extra flavor and texture.
