- Preheat your oven to 375°F (190°C). Grease a baking dish.
- In a large bowl, combine the rolled oats, baking powder, cinnamon, and salt.
- In a separate bowl, whisk together the milk, maple syrup, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Fold in the diced apple and chopped pecans (if using).
- Pour the mixture into the prepared baking dish.
- Bake for 30-35 minutes, or until the oatmeal is set and lightly golden brown on top.
- Let it cool for about 5 minutes before serving.
