  • 8 eggs
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon fine salt
  • 1/4 teaspoon black pepper
  • 3/4 cup cottage cheese 2% or full-fat
  • 1/2 cup Parmesan cheese shredded or shaved
  • 3 cups fresh spinach roughly chopped
  • 1/2 cup yellow onion or green onions finely diced

Method
 

  1. Preheat your oven to 375 degrees F (190 degrees C). Lightly mist a 9x9 inch baking dish with nonstick cooking spray.
  2. In a medium bowl, combine the eggs, garlic powder, salt, and pepper. Whisk until everything is well combined. Stir in the cottage cheese, Parmesan cheese, spinach, and onion.
  3. Pour the egg mixture evenly into the prepared baking dish.
  4. Bake for 30-35 minutes, or until the center is set.
  5. Store any leftovers, covered, in the refrigerator for up to 3 days. Reheat servings in a skillet or microwave.
