Ingredients
  

Pancakes
  • 1 cup rolled oats ground into flour
  • 2 eggs
  • 1/2 tsp baking powder
  • 1/4 tsp cinnamon
  • 1/4 cup milk or dairy-free alternative

Method
 

  1. Combine ground oats, mashed banana, eggs, baking powder, cinnamon, and milk in a bowl. Mix until well combined.
  2. Heat a lightly oiled griddle or frying pan over medium heat.
  3. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
  4. Cook for about 2-3 minutes per side, or until golden brown and cooked through.
  5. Serve warm with your favorite toppings.

Notes

You can add a touch of maple syrup or honey to the batter for extra sweetness if desired. Toppings can include fresh fruit, yogurt, or nuts.
