Method
- Preheat your grill to medium-high heat.
- In a small saucepan, combine the crushed pineapple, BBQ sauce, brown sugar, soy sauce, Worcestershire sauce, garlic powder, and ground ginger. Cook over medium heat, stirring occasionally, until the sugar is dissolved and the glaze has thickened slightly, about 5-7 minutes. Remove from heat.
- Lightly oil the grill grates to prevent sticking.
- Place the chicken breasts on the preheated grill. Grill for about 6-8 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- During the last 5 minutes of grilling, brush the chicken generously with the BBQ pineapple glaze. Allow the glaze to caramelize slightly.
- Remove the chicken from the grill and let it rest for a few minutes before serving. Serve with extra glaze on the side if desired.
Notes
You can marinate the chicken in some of the glaze for at least 30 minutes before grilling for extra flavor. Serve with your favorite summer sides like corn on the cob or a fresh salad.
