Ingredients
  

For the Bread
  • 2 cups all purpose flour + 1 tablespoon to coat the blueberries
  • 3/4 teaspoon baking soda
  • 1/2 teaspoon kosher salt
  • 1 cup granulated sugar
  • 1/4 cup butter softened
  • 1 cup mashed ripe bananas
  • 2 eggs
  • 1/3 cup vanilla or plain yogurt
  • 1 teaspoon vanilla extract
  • 1 1/2 cups fresh blueberries plus more for the top of the bread
For the Pan
  • 1 cooking spray

Method
 

  1. Preheat your oven to 350 degrees F.
  2. In a medium bowl, combine the 2 cups of flour, baking soda, and salt.
  3. Place the granulated sugar and butter in a large bowl. Beat with a mixer at medium speed until the mixture is fluffy and well blended, about 1 minute.
  4. Add the mashed banana, eggs, yogurt, and vanilla. Beat until blended. Add the flour mixture and beat at low speed just until moist.
  5. Place the blueberries in a bowl with 1 tablespoon of flour and toss to coat.
  6. Gently fold the coated blueberries into the batter. Spoon the batter into an 8 1/2 x 4 1/2-inch loaf pan that has been coated with cooking spray. Press additional blueberries into the top of the batter for decoration.
  7. Bake for 60-70 minutes, or until a wooden pick inserted into the center comes out clean. Cool the bread for 10 minutes in the pan on a wire rack, then remove the bread from the pan.
  8. Cool completely on the wire rack.

Notes

You can substitute frozen blueberries for fresh, but be aware that the bread may have streaks of blue color.
