Ingredients
  

For the Cookies
  • 1 cup Rolled oats not quick-cook
  • 3/4 cup Whole wheat flour sub all-purpose flour
  • 1 tsp Ground cinnamon
  • 1/2 tsp Baking soda
  • 1 Large banana mashed
  • 1/2 cup Creamy almond butter sub any nut butter
  • 1/2 cup Honey
  • 1/4 cup Cooking oil
  • 2 Tbsp Brown sugar
  • 1 tsp Vanilla extract
  • 1/2 cup Pecans chopped
  • 1/2 cup Dried cranberries
  • 1/2 cup Chocolate chips sub chopped dark chocolate bars

Method
 

  1. Preheat your oven to 350F (177C). Line a sheet pan with parchment paper or spray it with nonstick cooking spray.
  2. In a large bowl, combine the rolled oats, flour, ground cinnamon, and baking soda.
  3. In a separate medium bowl, mash the banana. Add the almond butter, honey, oil, brown sugar, and vanilla extract to the mashed banana and stir.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined.
  5. Stir in the chopped pecans, dried cranberries, and chocolate chips.
  6. Roll the dough into rounded tablespoon-sized balls and place them on the prepared sheet pan. Leave about 3 inches (7 cm) between each cookie. Press down on each cookie to flatten it slightly.
  7. Bake for 8 to 10 minutes, or until the edges are lightly browned but the center is still soft.
  8. Leave the cookies on the sheet pan for 5 minutes before carefully transferring them to a wire rack to cool completely.

Notes

These breakfast cookies are a great make-ahead option for busy mornings. Store them in an airtight container at room temperature for up to 3 days.
