Ingredients
  

For the Casserole
  • 2 pounds frozen hash browns, thawed
  • 1 cup shredded cheddar cheese
  • 1 cup shredded Monterey Jack cheese
  • 1 can condensed cream of mushroom soup
  • 1/2 cup sour cream
  • 1/4 cup chopped onion
  • 1/4 cup melted butter
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the thawed hash browns, cheddar cheese, Monterey Jack cheese, cream of mushroom soup, sour cream, chopped onion, melted butter, salt, and pepper. Mix well until all ingredients are evenly distributed.
  3. Spread the mixture evenly into the prepared baking dish.
  4. Bake for 45 minutes, or until the casserole is golden brown and bubbly.
  5. Let it cool for a few minutes before serving.

Notes

You can add cooked bacon bits or sausage to the mixture for extra flavor. For a crispier topping, you can sprinkle a little extra cheese on top during the last 10 minutes of baking.
