Cheesy Taco Pasta

Ingredients
  

For the Pasta
  • 16 oz Pasta such as rotini or penne
For the Taco Meat
  • 1 lb Ground beef 80/20 recommended
  • 1 packet Taco seasoning 1 oz
  • 1 cup Water
For the Cheese Sauce
  • 1 can Evaporated milk 12 oz
  • 2 cups Shredded cheddar cheese
  • 1/2 cup Shredded Monterey Jack cheese
  • 1/4 cup Milk optional, for thinning
Optional Toppings
  • 1/2 cup Chopped fresh cilantro
  • 1/4 cup Diced red onion
  • 1/4 cup Sour cream

Equipment

  • Large skillet
  • Large pot
  • Colander

Method
 

  1. Cook pasta according to package directions. Drain and set aside.
  2. While pasta is cooking, brown ground beef in a large skillet over medium-high heat. Drain off any excess grease.
  3. Stir in taco seasoning and water. Bring to a simmer and cook for 5 minutes, stirring occasionally.
  4. Reduce heat to low. Stir in evaporated milk and both cheeses. Stir until cheese is melted and sauce is smooth.
  5. Add the cooked pasta to the skillet with the cheese sauce. Stir to combine.
  6. If the sauce is too thick, add a little milk until desired consistency is reached.
  7. Serve immediately, topped with your favorite optional toppings.

Notes
