Ingredients
  

For the Dessert
  • 400 g Creme fraiche
  • 50 g Sugar
  • 1 Pck. Vanilla sugar
  • 100 g Spiced shortbread or amarettini cookies crumbled
  • 300 g Frozen raspberries
  • 30 g Meringues white and pink, crumbled

Equipment

  • Handheld electric mixer
  • Dessert glasses

Method
 

  1. In a bowl, whip the creme fraiche, sugar, and vanilla sugar with the beaters of a handheld mixer for about 5 minutes until creamy. Roughly crumble the cookies.
  2. Alternately layer the raspberries, crumbled cookies, and creme fraiche mixture into four dessert glasses. Chill the layered dessert for at least 3 hours.
  3. Just before serving, roughly crumble the meringues and sprinkle them over the top.
