- In a bowl, whip the creme fraiche, sugar, and vanilla sugar with the beaters of a handheld mixer for about 5 minutes until creamy. Roughly crumble the cookies.
- Alternately layer the raspberries, crumbled cookies, and creme fraiche mixture into four dessert glasses. Chill the layered dessert for at least 3 hours.
- Just before serving, roughly crumble the meringues and sprinkle them over the top.
