  • 1/2 cup butter softened
  • 2/3 cup white sugar
  • 1 egg
  • 1 egg white
  • 1/4 tsp vanilla extract
  • 1 2/3 cup all-purpose flour
  • 3/4 tsp baking powder
  • 1/4 tsp salt

Method
 

  1. If you have a stand mixer, cream together the butter and sugar. Add the egg and vanilla extract. Stir until well combined.
  2. Stir in the flour, baking powder, and salt. Mix until the dough comes together.
  3. Cover the dough with plastic wrap. Chill in the refrigerator for at least 1 hour, or preferably overnight.
  4. Preheat your oven to 400 degrees Fahrenheit. Roll out the chilled dough to 1/4 inch thickness. Use cookie cutters to create your desired shapes.
  5. Bake the cookies for 7-8 minutes, or until the edges are lightly golden.
