Ingredients
  

For the Mousse
  • 1 cup 2% cottage cheese
  • cup milk chocolate chips
  • 1 tbsp cocoa powder
For Serving (Optional)
  • 1 dollop whipped cream
  • 1 shaving chocolate
  • 1 serving favourite fruit

  • Food processor or high-speed blender
  • Spatula

Method
 

  1. Melt the chocolate chips. Place them in a microwave-safe dish. Microwave in 20-30 second intervals, stirring between each, until fully melted.
  2. Combine ingredients. Add the cottage cheese, melted chocolate, and cocoa powder to a food processor or high-speed blender. Blend on high for 20-30 seconds.
  3. Ensure smoothness. Use a spatula to scrape down the sides of the food processor or blender. Blend again until smooth.
  4. Chill the mousse. Pour the mousse into a serving dish or divide it into smaller individual dishes. You can eat it immediately, or chill it in the fridge for 30 minutes for a creamier, thicker texture.
  5. Serve. Serve with a dollop of whipped cream, a shaving of chocolate, and your favorite fruit.

Notes

This mousse is naturally gluten-free (use gluten-free chocolate chips), nut-free, and vegetarian. For a lactose-free version, use lactose-free cottage cheese and dairy-free chocolate chips. For a vegan version, you would need to find a vegan cottage cheese alternative.
You can adjust the creaminess by using different fat percentages of cottage cheese. Lower fat options may result in a less creamy mousse, while 4% M.F. cottage cheese will yield an extra creamy texture.
Semi-sweet or dark chocolate chips can be used instead of milk chocolate chips. White chocolate chips are not recommended as they may not melt properly.
While extra sugar is usually not needed due to the sweetness of the chocolate chips, you can add 1 teaspoon of maple syrup or honey for extra sweetness.
A small amount of vanilla extract can enhance the flavor. Be careful not to add too much, as it can make the mousse too liquidy.
