Cucumber Agua Fresca

Ingredients
  

For the Agua Fresca
  • 2 cups cucumber peeled and roughly chopped
  • 1 cup watermelon seeded and roughly chopped
  • 1/4 cup lime juice freshly squeezed
  • 2 tablespoons sugar or to taste
  • 2 cups water plus more if needed
For Garnish (Optional)

  • Fine-mesh sieve
  • Pitcher

Method
 

  1. Combine the chopped cucumber, watermelon, lime juice, sugar, and 2 cups of water in a blender.
  2. Blend until smooth. If the mixture is too thick, add more water, 1/4 cup at a time, until you reach your desired consistency.
  3. Pour the mixture through a fine-mesh sieve into a pitcher, pressing on the solids to extract as much liquid as possible. Discard the solids.
  4. Taste and adjust sweetness if necessary.
  5. Chill in the refrigerator for at least 30 minutes before serving. Serve over ice, garnished with lime slices and cucumber slices if desired.

Notes

You can adjust the amount of sugar to your preference. For a less sweet drink, reduce or omit the sugar. You can also add a few mint leaves to the blender for an extra layer of flavor.
