Ingredients
  

Salad
  • 1 large cucumber peeled, seeded, and chopped
  • 2 cups cherry tomatoes halved
  • 1 cup feta cheese crumbled
  • 1/2 cup red onion thinly sliced
  • 1/4 cup fresh mint chopped
Dressing
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. In a large bowl, combine the chopped cucumber, halved cherry tomatoes, crumbled feta cheese, sliced red onion, and chopped fresh mint.
  2. In a small bowl or jar, whisk together the olive oil, lemon juice, dried oregano, salt, and black pepper for the dressing.
  3. Pour the dressing over the salad ingredients and toss gently to combine.
  4. Serve immediately or chill for later.

Notes

You can add other vegetables like bell peppers or Kalamata olives. For a heartier salad, add grilled chicken or chickpeas.
