Easy Grilled Cheese Burrito Copycat Recipe

This recipe recreates the delicious grilled cheese burrito, offering a quick and satisfying meal. It combines seasoned beef, chipotle sour cream, rice, cheese, and tortilla strips, all wrapped in a large tortilla and grilled to crispy perfection.

Ingredients
  

Seasoned Beef
  • 1 lb 85/15 ground beef
  • 1 teaspoon granulated garlic
  • 0.5 teaspoon chili powder
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
Chipotle Sour Cream
  • 1 cup sour cream
  • 1 tablespoon chipotle hot sauce
  • 0.25 teaspoon cayenne pepper
Other Ingredients
  • 1 cup cooked spanish rice I used one pouch of this already cooked spanish rice
  • 3 cups shredded cheddar jack cheese separated
  • 1 cup red tortilla strips I used these
  • 2-3 tablespoons olive oil
  • 4 extra large burrito tortillas I used these

Equipment

Method
 

  1. Prepare the seasoned beef. Heat a large nonstick skillet over medium heat. Add the ground beef and break it apart. Sprinkle the granulated garlic, chili powder, salt, and pepper over the beef. Cook until the beef is fully cooked, about 5-7 minutes. Remove from heat and set aside.
  2. Prepare the chipotle sour cream. In a bowl, combine the sour cream, chipotle hot sauce, and cayenne pepper. Mix until well combined and set aside.
  3. Assemble a burrito. In a large bowl, combine ¼ pound of the cooked beef, ¼ cup chipotle sour cream, ¼ cup rice, ½ cup cheese, and ¼ cup tortilla strips. Mix the ingredients together. Spoon the mixture into the middle of a large burrito tortilla. Fold in two sides and then roll it tightly into a burrito.
  4. Cook the burrito. Heat the same large nonstick skillet over medium-high heat. Add 1-2 teaspoons of olive oil. Once the oil is fragrant, place ¼ cup of cheese in a line in the center of the skillet. Place the assembled burrito on top of the cheese.
  5. Carefully place a heavy cast iron skillet on top of the burrito. Cook for 3-4 minutes, or until the cheese melts and begins to brown. Remove the cast iron skillet, carefully flip the burrito, and cook for an additional 2-3 minutes, or until browned on the opposite side. Remove the burrito from the skillet.
  6. Repeat steps 5-7 until all 4 burritos are assembled and cooked.
  7. Let the burritos rest for 1 minute before serving.

Notes

Mixing all the ingredients together before wrapping helps the cheese melt best. If you prefer layered burritos, you can layer the ingredients instead. Both methods are delicious. Be sure to use extra-large burrito-sized tortillas to ensure you have enough room for the filling.
