- Place rice, garlic salt, and water in a large saucepan. Bring to a boil. Reduce heat, cover, and simmer until water is absorbed and rice is tender, 15-20 minutes. Remove from heat and let stand for 5 minutes.
- Meanwhile, in a large skillet, heat 2 tablespoons of oil over medium-high heat. Sauté the sweet potato for 8 minutes.
- Add the red onion and cook and stir until the sweet potato is tender, 4-6 minutes.
- Add the kale and cook and stir until tender, 3-5 minutes. Stir in the black beans and heat through.
- Gently stir the sweet chili sauce and the remaining oil into the cooked rice. Add the rice mixture to the skillet with the vegetables and beans.
- Serve with lime wedges and additional sweet chili sauce, if desired.
