- Preheat your oven to 350°F (175°C). Line a large baking sheet with parchment paper.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Press the cookie dough evenly onto the prepared baking sheet to form a large rectangle, about 1/4 inch thick. Bake for 15-20 minutes, or until golden brown around the edges.
- Let the cookie crust cool completely on the baking sheet.
- While the crust cools, prepare the cream cheese frosting. In a medium bowl, beat together the softened cream cheese and butter until smooth. Gradually beat in the powdered sugar and vanilla extract until the frosting is light and fluffy.
- Spread the cream cheese frosting evenly over the cooled cookie crust.
- Arrange the sliced strawberries, blueberries, and raspberries on top of the frosting to create a flag design. You can make stripes with strawberries and a blue field with blueberries, then add some raspberries for stars.
- Slice and serve immediately, or chill until ready to serve.
Notes
You can use other fruits like kiwi, blackberries, or mandarin oranges for the topping. Ensure all fruits are washed and dried before arranging them on the pizza.
