Freezer Breakfast Burritos

Make ahead breakfast burritos perfect for freezing and reheating.

Ingredients
  

For the Burritos
  • 1 lb Pork sausage casings removed
  • 8 Large flour tortillas 10-inch
  • 1.5 cup Shredded cheddar cheese
  • 8 Large eggs
  • 1/4 cup Milk
  • 1 tsp Salt
  • 1/2 tsp Black pepper

  • Large skillet
  • Baking sheet

Method
 

  1. Cook sausage in a large skillet over medium-high heat until browned and cooked through. Drain excess grease.
  2. While sausage cooks, whisk together eggs, milk, salt, and pepper in a bowl.
  3. Pour egg mixture into the skillet with the sausage. Cook, stirring occasionally, until eggs are set.
  4. Warm tortillas slightly to make them pliable. You can do this in a dry skillet or microwave.
  5. Assemble burritos: Spoon a portion of the sausage and egg mixture onto the center of each tortilla. Top with shredded cheese.
  6. Fold in the sides of the tortilla, then roll up tightly from the bottom to create a burrito.
  7. Place burritos seam-side down on a baking sheet. Bake at 350°F (175°C) for 5-7 minutes, or until cheese is melted and burritos are heated through.
  8. Let burritos cool completely before wrapping individually in plastic wrap and then aluminum foil. Store in the freezer.
  9. To reheat, remove foil and plastic wrap. Wrap in a paper towel and microwave for 1-2 minutes, or until heated through. You can also reheat in a 350°F (175°C) oven for about 15-20 minutes.

Notes

You can customize these burritos with your favorite additions like diced potatoes, onions, or peppers. Ensure burritos are completely cooled before freezing to prevent ice crystals.
