Method
- Cook sausage in a large skillet over medium-high heat until browned and cooked through. Drain excess grease.
- While sausage cooks, whisk together eggs, milk, salt, and pepper in a bowl.
- Pour egg mixture into the skillet with the sausage. Cook, stirring occasionally, until eggs are set.
- Warm tortillas slightly to make them pliable. You can do this in a dry skillet or microwave.
- Assemble burritos: Spoon a portion of the sausage and egg mixture onto the center of each tortilla. Top with shredded cheese.
- Fold in the sides of the tortilla, then roll up tightly from the bottom to create a burrito.
- Place burritos seam-side down on a baking sheet. Bake at 350°F (175°C) for 5-7 minutes, or until cheese is melted and burritos are heated through.
- Let burritos cool completely before wrapping individually in plastic wrap and then aluminum foil. Store in the freezer.
- To reheat, remove foil and plastic wrap. Wrap in a paper towel and microwave for 1-2 minutes, or until heated through. You can also reheat in a 350°F (175°C) oven for about 15-20 minutes.
Notes
You can customize these burritos with your favorite additions like diced potatoes, onions, or peppers. Ensure burritos are completely cooled before freezing to prevent ice crystals.
