Fresh Peach Salsa with Cinnamon Chips

Ingredients
  

For the Cinnamon Chips
  • 6 medium flour tortillas
  • 2 tablespoons melted butter
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon
For the Peach Salsa
  • 3 cups fresh peaches peeled, pitted, and diced
  • 1/4 cup red onion finely chopped
  • 2 tablespoons fresh cilantro chopped
  • 1 tablespoon lime juice fresh

Method
 

  1. Preheat your oven to 375°F (190°C).
  2. Cut each tortilla into 8 wedges. Arrange the wedges in a single layer on a baking sheet.
  3. In a small bowl, mix together the melted butter, sugar, and cinnamon.
  4. Brush the cinnamon-sugar mixture evenly over the tortilla wedges.
  5. Bake for 8-10 minutes, or until golden brown and crisp. Let cool completely.
  6. In a large bowl, combine the diced peaches, chopped red onion, cilantro, minced jalapeño, and lime juice.
  7. Gently stir to combine all ingredients.
  8. Cover and chill in the refrigerator for at least 15 minutes to allow the flavors to meld.
  9. Serve the peach salsa with the cooled cinnamon chips.

Notes

You can adjust the amount of jalapeño to your spice preference. If you don't have fresh peaches, you can use canned or frozen peaches, but be sure to drain them well.
