Garlic Parmesan Potato Wedges

Ingredients
  

  • 4 large russet potatoes sliced into wedges (should get about 8 wedges per potato)
  • 4 garlic cloves minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 1/2 teaspoon ground black pepper
  • 3 tablespoons olive oil
  • 1 cup shredded parmesan cheese
  • 2 tablespoons fresh chopped parsley

Method
 

  1. Preheat oven to 400 degrees.
  2. Prepare a baking sheet by spraying it with cooking spray. Set aside.
  3. In a small bowl, combine minced garlic, smoked paprika, sea salt, ground black pepper, and olive oil. Mix together.
  4. Add potatoes to a large bowl. Pour the garlic mixture over the potatoes. Using your hands, toss the potatoes to coat them with the garlic mixture. Place the wedged potatoes on the prepared baking sheet, skin side down.
  5. Sprinkle each potato wedge with parmesan cheese.
  6. Bake for 30 minutes, until wedges are fork tender.
  7. Garnish with chopped parsley. Serve!

Notes

These wedges are perfect as a side dish for any meal or as a snack. They pair well with dips like ranch or ketchup.
