Grilled Chicken Cobb Bowls

Ingredients
  

For the Chicken
  • 2 boneless, skinless chicken breasts Chicken breasts
  • 1 tablespoon Olive oil
  • 1/2 teaspoon Salt
  • 1/4 teaspoon Black pepper
For the Salad
  • 6 cups Romaine lettuce chopped
  • 2 Hard-boiled eggs chopped
  • 4 strips Bacon cooked and crumbled
  • 1/2 cup Cherry tomatoes halved
  • 1/4 cup Blue cheese crumbled
  • 1/2 cup Avocado diced
For the Dressing
  • 1/4 cup Ranch dressing

Method
 

  1. Preheat your grill to medium-high heat.
  2. Rub chicken breasts with olive oil, salt, and pepper.
  3. Grill chicken for 6-8 minutes per side, or until cooked through. Let rest for 10 minutes, then slice.
  4. In a large bowl, combine chopped romaine lettuce, chopped hard-boiled eggs, crumbled bacon, halved cherry tomatoes, crumbled blue cheese, and diced avocado.
  5. Top the salad with the sliced grilled chicken.
  6. Drizzle with ranch dressing and serve immediately.

Notes

For best results, chill all salad ingredients before assembling.
