Grilled Peach Salad with Honey Dressing

Ingredients
  

For the Salad
  • 4 medium peaches ripe but firm, halved and pitted
  • 5 oz mixed greens or your favorite salad greens
  • 1/4 cup pecans toasted
  • 2 oz goat cheese crumbled
For the Honey Dressing
  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 1/2 tsp Dijon mustard
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. Lightly brush the cut sides of the peaches with a little olive oil. Grill the peaches, cut side down, for 3-5 minutes, until grill marks appear and the peaches are slightly softened. Remove from grill and let cool slightly.
  3. While the peaches cool, prepare the dressing. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
  4. Slice the grilled peaches into wedges.
  5. In a large bowl, combine the mixed greens, grilled peach wedges, toasted pecans, and crumbled goat cheese.
  6. Drizzle the honey dressing over the salad and toss gently to coat. Serve immediately.

Notes

You can substitute walnuts for pecans if desired. For a different flavor profile, try adding a sprinkle of fresh mint or basil to the salad.
