Method
- Preheat your grill to medium-high heat.
- Lightly brush the cut sides of the peaches with a little olive oil. Grill the peaches, cut side down, for 3-5 minutes, until grill marks appear and the peaches are slightly softened. Remove from grill and let cool slightly.
- While the peaches cool, prepare the dressing. In a small bowl, whisk together the olive oil, apple cider vinegar, honey, Dijon mustard, salt, and pepper until well combined.
- Slice the grilled peaches into wedges.
- In a large bowl, combine the mixed greens, grilled peach wedges, toasted pecans, and crumbled goat cheese.
- Drizzle the honey dressing over the salad and toss gently to coat. Serve immediately.
Notes
You can substitute walnuts for pecans if desired. For a different flavor profile, try adding a sprinkle of fresh mint or basil to the salad.
