- Preheat your grill to medium-high heat.
- Thread the watermelon cubes and halloumi cubes alternately onto the skewers.
- Brush the skewers lightly with olive oil and season with black pepper.
- Grill the skewers for about 3-5 minutes per side, until the halloumi is golden brown and slightly softened, and the watermelon has grill marks.
- Remove skewers from the grill. Sprinkle with chopped fresh mint and drizzle with balsamic glaze.
- Serve immediately.
