Grilled Watermelon Skewers with Halloumi Cheese

Ingredients
  

For the Skewers
  • 1 medium watermelon seedless, cut into 1-inch cubes
  • 8 oz halloumi cheese cut into 1-inch cubes
  • 1/4 cup fresh mint leaves chopped
  • 2 tbsp olive oil
  • 1 tbsp balsamic glaze for drizzling
  • 1/2 tsp black pepper freshly ground

Method
 

  1. Preheat your grill to medium-high heat.
  2. Thread the watermelon cubes and halloumi cubes alternately onto the skewers.
  3. Brush the skewers lightly with olive oil and season with black pepper.
  4. Grill the skewers for about 3-5 minutes per side, until the halloumi is golden brown and slightly softened, and the watermelon has grill marks.
  5. Remove skewers from the grill. Sprinkle with chopped fresh mint and drizzle with balsamic glaze.
  6. Serve immediately.

Notes

You can add other ingredients like red onion or cherry tomatoes to the skewers for extra flavor and color.
