Ingredients
  

For the Zucchini
  • 2 medium zucchini trimmed and sliced lengthwise into 1/4-inch thick planks
  • 2 tablespoons olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Method
 

  1. Preheat your grill to medium-high heat.
  2. In a bowl, toss the zucchini planks with olive oil, salt, and pepper until evenly coated.
  3. Place the zucchini planks on the preheated grill.
  4. Grill for about 4-5 minutes per side, or until tender and grill marks appear.
  5. Remove from grill and serve immediately.

Notes

You can add other seasonings like garlic powder or Italian herbs for extra flavor. Serve as a side dish with grilled meats or fish.
