Ground Beef and Potato Casserole

Ingredients
  

For the Potato Base
  • 4 cups thinly sliced peeled potatoes
  • 2 tablespoons butter, melted
  • 1/2 teaspoon salt
For the Ground Beef Filling
  • 1 pound ground beef
  • 1 package (10 ounces) frozen corn
For the Sauce
  • 1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
  • 1/3 cup 2% milk
  • 1/4 teaspoon garlic powder
  • 1/8 teaspoon pepper
  • 1 tablespoon chopped onion
For Topping
  • 1 cup shredded cheddar cheese, divided
  • 1 Minced fresh parsley, optional

Method
 

  1. Preheat your oven to 400°F (200°C). Grease a 13x9-inch baking dish.
  2. In a large bowl, toss the sliced potatoes with melted butter and salt. Arrange the potatoes on the bottom and up the sides of the prepared baking dish. Bake uncovered for 25-30 minutes, or until the potatoes are almost tender.
  3. While the potatoes are baking, cook the ground beef in a large skillet over medium heat until no longer pink. Drain off any excess grease.
  4. Sprinkle the cooked ground beef and frozen corn evenly over the partially baked potatoes.
  5. In a separate bowl, combine the undiluted cream of celery soup, milk, garlic powder, pepper, chopped onion, and 1/2 cup of the cheddar cheese. Pour this mixture over the ground beef and corn layer.
  6. Bake uncovered for 20 minutes, or until the vegetables are tender.
  7. Sprinkle the remaining 1/2 cup of cheddar cheese over the top. Bake for an additional 2-3 minutes, or until the cheese is melted. If desired, sprinkle with fresh parsley before serving.
