Method
- Preheat your oven to 400°F (200°C). Grease a 13x9-inch baking dish.
- In a large bowl, toss the sliced potatoes with melted butter and salt. Arrange the potatoes on the bottom and up the sides of the prepared baking dish. Bake uncovered for 25-30 minutes, or until the potatoes are almost tender.
- While the potatoes are baking, cook the ground beef in a large skillet over medium heat until no longer pink. Drain off any excess grease.
- Sprinkle the cooked ground beef and frozen corn evenly over the partially baked potatoes.
- In a separate bowl, combine the undiluted cream of celery soup, milk, garlic powder, pepper, chopped onion, and 1/2 cup of the cheddar cheese. Pour this mixture over the ground beef and corn layer.
- Bake uncovered for 20 minutes, or until the vegetables are tender.
- Sprinkle the remaining 1/2 cup of cheddar cheese over the top. Bake for an additional 2-3 minutes, or until the cheese is melted. If desired, sprinkle with fresh parsley before serving.
