- Preheat your oven to 200 °C (400 °F) conventional heat or 180 °C (350 °F) fan-assisted heat. Line a baking sheet with parchment paper.
- Core the apple and dice it into small pieces. Drizzle with lemon juice and set aside.
- In a bowl, mix together the oatmeal, flour, baking powder, vanilla, cinnamon, and salt.
- Cream the softened vegan butter and sugar with a hand mixer until fluffy. Add this mixture to the dry ingredients and knead briefly until combined.
- Chop the walnuts. Add the chopped walnuts and diced apples to the cookie dough and gently incorporate them.
- If the dough seems too dry, you can add a little more lemon juice or a splash of water or plant-based milk.
- Shape the dough into approximately 20 cookies. Place them on the prepared baking sheet, ensuring they have enough space between them.
- Optionally, sprinkle with a little sugar. Bake in the preheated oven for about 12-15 minutes, or until golden brown.
- Allow the cookies to cool completely. They will be soft when they come out of the oven but will become crisp as they cool.
- Store the cookies in an airtight container or enjoy them immediately.
