Ingredients
  

For the Bark
  • 1 1/2 cup almond flour
  • 1/4 cup melted coconut oil
  • 1/4 cup maple syrup
  • 1/2 teaspoon vanilla extract
  • 1 1/2 cup chocolate chips, divided

Method
 

  1. In a large bowl, mix together almond flour, coconut oil, maple syrup, and vanilla extract until smooth.
  2. Fold in half of the chocolate chips.
  3. Line a baking sheet with parchment paper. Spread the cookie dough mixture on top to form the bark.
  4. Place the baking sheet in the freezer for 5 to 10 minutes to chill.
  5. While the bark chills, melt the remaining chocolate chips in the microwave.
  6. Pour the melted chocolate evenly over the chilled cookie dough bark. Return to the freezer for at least 1 hour to set.
  7. Remove the bark from the freezer, cut into pieces, and enjoy!

Notes

Store leftovers in the freezer for up to 2 months. Allow the bark to thaw for a few minutes before eating for the best texture.
