- In a large bowl, mix together almond flour, coconut oil, maple syrup, and vanilla extract until smooth.
- Fold in half of the chocolate chips.
- Line a baking sheet with parchment paper. Spread the cookie dough mixture on top to form the bark.
- Place the baking sheet in the freezer for 5 to 10 minutes to chill.
- While the bark chills, melt the remaining chocolate chips in the microwave.
- Pour the melted chocolate evenly over the chilled cookie dough bark. Return to the freezer for at least 1 hour to set.
- Remove the bark from the freezer, cut into pieces, and enjoy!
Notes
Store leftovers in the freezer for up to 2 months. Allow the bark to thaw for a few minutes before eating for the best texture.
