Ingredients
  

For the Shrimp
  • 1 lb raw shrimp thawed, peeled and tails removed
For the Sauce
  • 1/3 cup honey
  • 1/4 cup soy sauce
  • 1 tbsp minced garlic
  • 1 tsp minced ginger
For the Stir Fry
  • 2 tbsp butter, salted
  • 1 tbsp olive oil or avocado oil
  • 1 lb asparagus trimmed and cut into 2 to 3 inch pieces
  • 1 large red bell pepper sliced into strips
  • 1/2 medium onion sliced

Method
 

  1. Place the cleaned shrimp in a bowl and set aside.
  2. Combine the honey, soy sauce, garlic, and ginger in a small bowl. Pour half of this mixture over the shrimp, reserving the other half for later. Stir the shrimp to coat, cover, and refrigerate for at least 15 minutes.
  3. Meanwhile, heat a large skillet over medium-high heat. Add 1 tablespoon of butter and 1 tablespoon of olive oil. Once hot, add the asparagus, bell pepper, and onion. Sauté until crisp-tender and slightly charred, about 4 minutes. Remove the vegetables from the skillet to a plate to keep warm.
  4. Add the remaining tablespoon of butter to the skillet. Add the shrimp (discard any used marinade). Cook the shrimp about 1 minute per side, or until caramelized and cooked through. Quickly add the vegetables and the reserved sauce to the skillet and heat through.
  5. Serve over hot cooked rice if desired.

Notes

You can substitute the shrimp with chicken or steak. Cook until safe to eat. To thicken the sauce, combine 1 teaspoon of cornstarch with 1 teaspoon of cold water and pour into the skillet with the sauce. Stir, and the sauce should thicken quickly.
