Method
- Make the sauce: Mix all the sauce ingredients in a small bowl and set aside.
- Cook the udon noodles: Remove udon noodles from their package. Add them to a pot of boiling water. If using frozen udon, add them directly. Stir gently until separated and pliable, about 1-2 minutes. Avoid overcooking.
- Rinse and drain the noodles under cold water. If not using immediately, add a little oil to prevent sticking.
- Stir fry: Heat a pan over high heat and add the oil. Add the ground meat and stir fry until almost cooked. Add the vegetables and stir fry until the meat is fully cooked and vegetables are tender. Add the noodles, sauce, and scallions. Stir fry for about 3 minutes, or until everything is well combined. Serve immediately.
