- Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
- In a large bowl, combine the ground chicken, almond flour, Parmesan cheese, egg, minced garlic, oregano, salt, and pepper. Mix gently with your hands until just combined. Avoid overmixing.
- Press the mixture evenly into the prepared loaf pan.
- In a small bowl, whisk together the ketchup, Worcestershire sauce, and Dijon mustard for the glaze.
- Spread the glaze evenly over the top of the meatloaf.
- Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C) and the glaze is caramelized.
- Let the meatloaf rest in the pan for 10 minutes before slicing and serving. This helps it hold its shape.
