  • 1 lb ground chicken
  • 1/2 cup almond flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
For the Glaze
  • 2 tablespoons ketchup
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Dijon mustard

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper.
  2. In a large bowl, combine the ground chicken, almond flour, Parmesan cheese, egg, minced garlic, oregano, salt, and pepper. Mix gently with your hands until just combined. Avoid overmixing.
  3. Press the mixture evenly into the prepared loaf pan.
  4. In a small bowl, whisk together the ketchup, Worcestershire sauce, and Dijon mustard for the glaze.
  5. Spread the glaze evenly over the top of the meatloaf.
  6. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C) and the glaze is caramelized.
  7. Let the meatloaf rest in the pan for 10 minutes before slicing and serving. This helps it hold its shape.
