Loaded Baked Potatoes (Bar Night)

Ingredients
  

For the Baked Potatoes
  • 6 Potatoes (russet, sweet, or white)
  • 1 tablespoon Cooking oil
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
For the Toppings Bar
  • 1 stick Salted butter sliced
  • 1 cup Sour cream
  • 2 cups Shredded cheddar cheese
  • 1 cup Feta cheese crumbled
  • 1/4 cup Chopped fresh chives
  • 1 cup Sautéed sliced mushrooms
  • 1 cup Crispy bacon crumbled
  • 1 cup Cherry tomatoes halved
  • 1 cup Avocado sliced
  • 1 cup Chili

Method
 

  1. Preheat your oven to 425 degrees F (220 degrees C).
  2. Scrub the potatoes clean and pat them dry. Rub them all over with cooking oil, salt, and pepper. Pierce each potato several times with a fork.
  3. Wrap each potato tightly in foil. Place the potatoes directly on the oven racks or on a foil-lined baking sheet. Bake for 50 to 60 minutes, turning them every 20 minutes, until tender.
  4. While the potatoes bake, prepare your toppings. Place the sliced butter, sour cream, cheeses, chives, mushrooms, bacon, tomatoes, avocado, and chili into separate small bowls or plates. Arrange these on your serving board first to help anchor it.
  5. Once the potatoes are cooked, cut them in half lengthwise and place them on the serving board with the toppings.
  6. Serve with salt, pepper, and your favorite seasonings on the side for guests to customize their loaded baked potatoes.
