Low-Carb Bacon Cheeseburger Casserole

Ingredients
  

For the Casserole
  • 1 pound ground beef
  • 1 cup onion chopped
  • 2 cloves garlic minced
  • 1 teaspoon worcestershire sauce
  • 2 oz cream cheese
  • 1 teaspoon Burger Seasoning Weber Burger Seasoning or McCormick's Grill Mates Burger Seasoning
  • 1/2 teaspoon salt to taste
  • 1/2 teaspoon black pepper to taste
For the Topping
  • 2 eggs
  • 1 tablespoon mustard
  • 1/2 cup heavy whipping cream
  • 1 cup shredded cheddar cheese divided
  • 1 cup shredded white cheddar cheese divided
  • 3 slices bacon cooked and crumbled
  • 1 kosher pickle, cut into pieces

Method
 

  1. Preheat your oven to 350 degrees F (175 degrees C).
  2. In a skillet over medium-high heat, cook the ground beef. Add the garlic, onions, burger seasoning, salt, and pepper. Break the ground beef into chunks with a spatula.
  3. Stir in the worcestershire sauce and cream cheese. Cook until the ground beef is no longer pink and the cream cheese is melted.
  4. Remove the skillet from the heat.
  5. In a medium bowl, whisk together the eggs, 1/2 cup shredded cheddar cheese, 1/2 cup shredded white cheddar cheese, heavy cream, and mustard.
  6. Spray an 8x11 or 9x9 inch baking dish with cooking spray. Pour the ground beef mixture into the dish. Sprinkle the crumbled bacon and pickle pieces evenly over the beef mixture.
  7. Drizzle the egg mixture over the top of the casserole.
  8. Sprinkle the remaining 1/2 cup shredded cheddar cheese and 1/2 cup shredded white cheddar cheese over the top.
  9. Bake for 15-20 minutes, or until the cheese is bubbly and lightly golden. My casserole was ready in about 17 minutes.
  10. Let the casserole cool slightly before serving.

Notes

You can add your favorite keto-friendly burger toppings like mushrooms or guacamole. If your ground beef releases a lot of oil, drain it before baking.
