  • 2/3 cup Mayonnaise
  • 1/2 cup Finely grated Parmesan cheese (about 2 ounces)
  • 1 teaspoon Garlic powder
For the Chicken
  • 2 large Boneless, skinless chicken breasts (about 1 1/2 pounds total)
  • 1 teaspoon Kosher salt
  • 1/4 teaspoon Freshly ground black pepper
For Garnish (Optional)
  • Chopped fresh parsley leaves

Method
 

  1. Preheat your oven to 375°F.
  2. In a small bowl, mix together the mayonnaise, grated Parmesan cheese, and garlic powder until well combined.
  3. Cut each chicken breast in half horizontally to create four pieces. Pat the chicken dry with paper towels. Season all sides with kosher salt and black pepper.
  4. Arrange the chicken pieces in a single layer in a 9x13-inch broiler-safe baking dish. Spread the mayonnaise mixture evenly over the top of each chicken piece.
  5. Bake for 20 to 25 minutes, or until the chicken is cooked through and an instant-read thermometer inserted into the thickest part registers at least 165°F.
  6. Switch your oven to the broil setting. Broil for 2 to 3 minutes, watching closely, until the topping is golden-brown and bubbly.
  7. Garnish with fresh parsley, if desired, before serving.
