Ingredients
  

For the Banana Bread
  • 3 over-ripe bananas
  • 1/2 cup packed light brown sugar
  • 1/3 cup melted butter
  • 2 eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt

Method
 

  1. Preheat your oven to 350˚F (175˚C). Line a 9 by 5-inch loaf pan with parchment paper, leaving excess on the two longer sides for easy removal.
  2. In a large bowl, mash the bananas. Add the brown sugar and melted butter, and continue to mash until the mixture is almost completely smooth.
  3. Add the eggs and vanilla extract to the bowl. Whisk until the mixture is smooth.
  4. Add the all-purpose flour, baking soda, cinnamon, and salt to the bowl. Fold the ingredients with a rubber spatula until no streaks of flour remain. Do not overmix.
  5. Scrape the batter into the prepared loaf pan. Bake for 50 to 55 minutes, or until a cake tester inserted into the center of the loaf comes out clean.
  6. Let the banana bread cool in the pan for at least 20 minutes. Then, remove it from the pan and let it cool completely on a wire rack before slicing and serving.
