Chicken Pasta
  • 1.5 pounds boneless skinless chicken cut into 1-inch pieces
  • 10 ounces penne pasta
  • 0.5 teaspoon salt
  • 0.25 teaspoon pepper
  • 1 tablespoon olive oil
Sauce
  • 3 tablespoons butter
  • 2 teaspoons garlic minced
  • 3 tablespoons flour
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup parmesan cheese grated
  • 1 cup sun-dried tomatoes drained
  • 1 teaspoon paprika
  • 2 teaspoons dried Italian seasoning
  • 1 small bunch fresh basil for garnish

Method
 

  1. Cook the penne pasta according to package directions. Drain the pasta and set it aside.
  2. Cut the chicken into 1-inch pieces and season with salt and pepper.
  3. Heat olive oil in a large skillet over medium-high heat. Add the chicken and cook for 6-8 minutes until cooked through. Remove chicken from skillet and set aside.
  4. Return to the same skillet and add butter. Once melted, sauté the garlic for 30 seconds until fragrant. Add flour and stir to make a paste.
  5. Whisk in chicken broth, heavy cream, and Parmesan cheese.
  6. Stir in sun-dried tomatoes, paprika, and Italian seasoning. Season with additional salt and pepper if needed.
  7. Simmer the sauce for a few minutes until it thickens.
  8. Return the cooked chicken to the skillet with the sauce. Add the cooked pasta and stir to coat everything evenly.
  9. Garnish with fresh basil and extra Parmesan cheese before serving.
