Peach Brown Sugar Cobbler

Ingredients
  

For the Filling
  • 6 cups peeled, sliced peaches fresh or frozen
  • 1/2 cup brown sugar packed
  • 2 tablespoons all-purpose flour
  • 1 teaspoon lemon juice
  • 1/2 teaspoon cinnamon
For the Topping
  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup milk
  • 1/2 cup butter melted

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large bowl, combine the sliced peaches, 1/2 cup brown sugar, 2 tablespoons flour, lemon juice, and cinnamon. Toss to coat the peaches evenly. Pour the peach mixture into the prepared baking dish.
  3. In a separate medium bowl, whisk together 1 cup flour, 1 cup granulated sugar, 1/2 cup brown sugar, baking powder, and salt.
  4. Pour the melted butter into the dry ingredients and stir until just combined. Then, stir in the milk until a thick batter forms.
  5. Spoon dollops of the batter evenly over the peach mixture in the baking dish. Do not spread it; leave it in mounds.
  6. Bake for 35-40 minutes, or until the topping is golden brown and the filling is bubbly.
  7. Let the cobbler cool for at least 15 minutes before serving. Serve warm, perhaps with a scoop of vanilla ice cream.

Notes

You can adjust the amount of sugar based on the sweetness of your peaches. If using frozen peaches, do not thaw them before using.
