Peach Crumble Bars

These peach crumble bars feature a buttery oat topping and a sweet peach filling. They are a simple and delicious dessert.

Ingredients
  

For the Crust and Topping
  • 1.5 cups all-purpose flour
  • 1 cup rolled oats
  • 0.75 cup granulated sugar
  • 0.5 teaspoon salt
  • 0.75 cup unsalted butter, melted
For the Peach Filling
  • 4 cups fresh or frozen peaches, sliced if using frozen, do not thaw
  • 0.25 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon juice
  • 0.5 teaspoon cinnamon

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 inch baking pan.
  2. In a medium bowl, combine the flour, rolled oats, 3/4 cup sugar, and salt for the crust and topping. Pour in the melted butter and mix until combined and crumbly.
  3. Press about two-thirds of the oat mixture evenly into the bottom of the prepared baking pan to form the crust.
  4. In a separate bowl, gently toss the peaches with 1/4 cup sugar, cornstarch, lemon juice, and cinnamon for the filling.
  5. Spread the peach filling evenly over the crust.
  6. Sprinkle the remaining oat mixture evenly over the peach filling.
  7. Bake for 30-35 minutes, or until the topping is golden brown and the filling is bubbly.
  8. Let the bars cool completely in the pan before cutting into 12 bars.

Notes

You can add a pinch of nutmeg to the filling for extra flavor. Serve warm or at room temperature.
