- Brown the ground beef with salt and pepper in a large skillet over medium-high heat. Add garlic and ginger and cook for 1-2 minutes until fragrant.
- Add the diced bell pepper and carrots to the skillet. Cook for 3-4 minutes until the vegetables begin to soften.
- Pour in the coconut aminos, sesame oil, and fish sauce. Stir well and continue to cook until the vegetables are tender.
- Serve the stir-fry over cauliflower rice or white rice. Portion into meal prep containers for easy lunches or dinners throughout the week.
Notes
This stir-fry is versatile. Feel free to add other vegetables you have on hand, such as broccoli, snap peas, or onions. For a spicier kick, add a pinch of red pepper flakes.
