Ingredients
  

  • 1 lb ground beef
  • 3 cloves garlic minced
  • 2 tablespoons fresh ginger grated
  • 1 red bell pepper diced
  • 2 large carrots diced
  • 3 tablespoons coconut aminos
  • 1 tablespoon sesame oil
  • 1 tablespoon fish sauce
  • 4 cups cauliflower rice or cooked white rice
  • Salt and pepper to taste

Method
 

  1. Brown the ground beef with salt and pepper in a large skillet over medium-high heat. Add garlic and ginger and cook for 1-2 minutes until fragrant.
  2. Add the diced bell pepper and carrots to the skillet. Cook for 3-4 minutes until the vegetables begin to soften.
  3. Pour in the coconut aminos, sesame oil, and fish sauce. Stir well and continue to cook until the vegetables are tender.
  4. Serve the stir-fry over cauliflower rice or white rice. Portion into meal prep containers for easy lunches or dinners throughout the week.

Notes

This stir-fry is versatile. Feel free to add other vegetables you have on hand, such as broccoli, snap peas, or onions. For a spicier kick, add a pinch of red pepper flakes.
