Quick Sausage and Cream Pasta

Ingredients
  

For the Pasta
  • 1 package Pasta
For the Sauce
  • 2 tbsp Olive Oil
  • 1/2 Onion finely chopped (optional)
  • 1 pkg Jimmy Dean Regular bulk sausage
  • 6 oz Tomato Paste
  • 1 cup Beef Stock or 1 cup water with 1 tsp bouillon paste
  • 1 tsp Salt to taste
  • 1/2 tsp Black Pepper to taste
  • 1 cup Light Cream heavy cream also works
Optional Topping
  • 1/4 cup Parmesan Cheese freshly grated

Equipment

  • Large pot
  • Large skillet

Method
 

  1. Cook pasta in salted boiling water according to package directions. Drain and set aside.
  2. While the pasta cooks, heat olive oil in a large skillet over medium heat. Add chopped onion (if using) and cook until softened, about 3-5 minutes.
  3. Add the bulk sausage meat to the skillet. Break it up with a spoon and cook until browned, about 5-7 minutes. Drain off any excess fat if desired.
  4. Stir in the tomato paste and beef stock. Season with salt and pepper. Bring to a simmer, then reduce heat to low and cook for 10 minutes, stirring occasionally.
  5. Pour in the light cream and stir until the sauce is well combined and heated through. Do not boil after adding cream.
  6. Add the drained pasta to the skillet with the sauce. Toss gently to coat the pasta evenly.
  7. Serve immediately, topped with freshly grated Parmesan cheese if desired.

Notes

This recipe is easily adaptable. Feel free to add your favorite vegetables or spices. The sauce is delicious on its own, but a sprinkle of Parmesan cheese adds a nice finishing touch.
