Ingredients
  

For the Base
  • 1 package Pavesini or ladyfingers or other suitable biscuits
  • 1 cup Coffee or coconut milk cooled
For the Cream
  • 3 Eggs separated
  • 3 tbsp Sugar
  • 500 g Mascarpone cheese
  • 16 Raffaello pralines crushed
For Decoration
  • 2 tbsp Shredded coconut

Method
 

  1. Brew a cup of coffee, preferably espresso, and let it cool in a shallow dish large enough to dip the biscuits.
  2. Alternatively, use coconut milk. Dip the Pavesini or ladyfingers briefly into the cooled coffee or coconut milk.
  3. Arrange a single layer of dipped biscuits to cover the bottom of your baking dish.
  4. In a clean bowl, beat the 2 egg whites with a pinch of salt until stiff peaks form.
  5. In a separate bowl, whisk together the 3 egg yolks and 3 tablespoons of sugar until pale and creamy.
  6. Add the mascarpone cheese to the egg yolk mixture and stir until smooth.
  7. Stir in the crushed Raffaello pralines into the mascarpone cream.
  8. Gently fold the beaten egg whites into the mascarpone mixture using a spatula until just combined.
  9. Spread half of the mascarpone cream mixture evenly over the biscuit layer in the baking dish.
  10. Sprinkle 1 tablespoon of shredded coconut over the cream.
  11. Arrange another layer of dipped biscuits on top of the cream.
  12. Spread the remaining mascarpone cream mixture over the second biscuit layer.
  13. Sprinkle the remaining 1 tablespoon of shredded coconut over the top and decorate with the whole Raffaello pralines.
  14. Cover the dish and refrigerate for at least 2 hours, or until firm, before serving.
