This icebox cake is a simple, no-bake dessert perfect for summer holidays. It features layers of whipped cream and graham crackers with fresh berries.

Ingredients
  

For the Cake
  • 2 packages Graham crackers about 14-16 crackers per package
  • 3 cups Heavy cream cold
  • 1 cup Powdered sugar
  • 2 teaspoons Vanilla extract
For the Topping
  • 1 cup Fresh blueberries
  • 1 cup Fresh strawberries sliced
  • 1/2 cup Fresh raspberries

Equipment

  • 9x13-inch baking dish
  • Electric mixer
  • Mixing bowls

Method
 

  1. Line the bottom of a 9x13 inch baking dish with a single layer of graham crackers. Break crackers as needed to fill gaps.
  2. In a large bowl, beat the cold heavy cream with an electric mixer on medium-high speed until soft peaks form.
  3. Gradually add the powdered sugar and vanilla extract to the whipped cream. Continue beating until stiff peaks form.
  4. Spread half of the whipped cream mixture evenly over the graham crackers.
  5. Add another layer of graham crackers over the whipped cream.
  6. Spread the remaining whipped cream mixture evenly over the second layer of graham crackers.
  7. Arrange the fresh blueberries, strawberries, and raspberries on top of the whipped cream in a decorative pattern.
  8. Cover the dish with plastic wrap and refrigerate for at least 8 hours, or preferably overnight, to allow the crackers to soften and the flavors to meld.
  9. Slice and serve chilled.

Notes

For a more stable cake, you can add a layer of cream cheese to the whipped cream mixture. Ensure all ingredients are cold for the best whipping results.
