- Preheat your oven to 400°F (200°C). In a small bowl, stir together the paprika, coconut sugar, garlic powder, onion powder, dried oregano, salt, and pepper to make the seasoning.
- Place the pork chops in a baking dish or on a rimmed baking sheet. Drizzle the olive oil on both sides. Sprinkle the seasoning evenly on both sides, then rub it in.
- Bake uncovered for 15 to 20 minutes. Use an instant-read thermometer to check for an internal temperature of 145°F (65°C). Let the pork chops rest for 5 minutes to keep them juicy. Spoon the pan juices over the top before serving.

Store leftovers in the refrigerator for 3 to 4 days or freeze for up to 3 months. If your pork chops are thinner than 1-inch, they will cook faster, so check the temperature sooner. For caramelized edges, you can use the broiler for the last few minutes of cooking, but do so before the chops reach their final internal temperature to avoid overcooking.
