Restaurant-Style Starbucks Drinks at Home: Strawberry Acai Refresher

Ingredients
  

For the Strawberry Acai Refresher
  • 0.5 cup Strawberry Acai Base recipe below
  • 0.5 cup water
  • 1 cup ice
  • 1 serving freeze-dried strawberries
For the Strawberry Acai Base
  • 2.25 cups white grape juice
  • 1 cup hulled and sliced strawberries
  • 0.5 teaspoon acai powder
  • 0.5 teaspoon green coffee extract powder optional, for caffeine
  • 0.25 teaspoon passionfruit powder optional
  • 1 teaspoon lemon juice

Method
 

  1. To make the Strawberry Acai Base: Combine white grape juice and sliced strawberries in a medium saucepan. Bring to a boil.
  2. Lower heat to a simmer and cook for 10 minutes, until strawberries break down.
  3. Remove from heat. Strain the mixture through a fine mesh sieve into a heatproof bowl, pressing down on the strawberries to extract as much liquid as possible. Discard the strawberries.
  4. Pour the strained liquid back into the saucepan and return to low heat. Stir in acai powder, green coffee extract powder, and passionfruit powder until mostly dissolved. Some granules from the acai powder may remain.
  5. Remove from heat and stir in lemon juice. Pour into a heatproof bowl or large mason jar and refrigerate until completely cool.
  6. To make the Refresher: Add about 1/2 cup of the cooled Strawberry Acai Base and 1/2 cup of water to an ice-filled shaker. Shake well.
  7. Pour the mixture into an ice-filled glass. Add freeze-dried strawberries.
  8. Adjust sweetness by adding more base for a sweeter drink or less for a less sweet drink.

Notes

The Strawberry Acai Base makes enough for about 4 drinks. The base can be stored in the refrigerator for up to 2 weeks. The green coffee extract provides caffeine but can be omitted if you prefer a caffeine-free drink. The refresher will still taste delicious without the acai or passion fruit powders.
