Ingredients
  

For the Green Beans
  • 1 tbsp olive oil
  • 3/4 cup finely chopped red onion or shallots
  • 2 tbsp minced garlic
  • 1 lb fresh green beans trimmed
  • 15 sprigs fresh thyme
  • 1/2 tsp red wine vinegar optional

Method
 

  1. Heat the olive oil in a large skillet over medium heat. Add the chopped red onion or shallots and cook until softened, about 5 minutes.
  2. Add the minced garlic and cook for 1 minute more until fragrant.
  3. Add the fresh green beans and thyme sprigs to the skillet. Cook, stirring occasionally, until the green beans are tender-crisp, about 8-10 minutes.
  4. If using, stir in the red wine vinegar. Season with salt and pepper to taste.
  5. Remove from heat and let rest for 5 minutes before serving.

Notes

For an extra touch, you can top with crispy fried onions or toasted slivered almonds before serving. This dish can be prepped ahead of time and reheated gently before serving.
