This skillet peach cake is a simple dessert featuring soft summer fruit.

Ingredients
  

For the Cake
  • 1.5 cups all-purpose flour
  • 1 cup granulated sugar
  • 1.5 teaspoons baking powder
  • 0.5 teaspoon salt
  • 0.5 cup unsalted butter softened
  • 2 large eggs
  • 0.5 cup milk
  • 1 teaspoon vanilla extract
For the Peaches
  • 3 large peaches pitted and sliced
  • 2 tablespoons granulated sugar
  • 1 teaspoon ground cinnamon

  • 10-inch cast iron skillet
  • Mixing bowls
  • Whisk

Method
 

  1. Preheat your oven to 375°F (190°C). Butter your 10-inch cast iron skillet.
  2. In a large bowl, whisk together the flour, 1 cup of sugar, baking powder, and salt.
  3. Add the softened butter to the dry ingredients and mix until the mixture resembles coarse crumbs.
  4. In a separate small bowl, whisk together the eggs, milk, and vanilla extract.
  5. Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
  6. Spread the batter evenly into the prepared skillet.
  7. Arrange the sliced peaches over the batter.
  8. In a small bowl, combine the 2 tablespoons of sugar and cinnamon. Sprinkle this mixture over the peaches.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean and the top is golden brown.
  10. Let the cake cool slightly in the skillet before serving.

Notes

Serve warm with vanilla ice cream or whipped cream.
