- Preheat your oven to 400°F (200°C). Toss the cubed potatoes with olive oil, salt, and pepper on a baking sheet. Spread them in a single layer.
- Roast the potatoes for 25-30 minutes, flipping halfway through, until they are tender and crispy.
- While the potatoes are roasting, cook the ground beef in a large skillet over medium-high heat. Break it apart with a spoon until browned. Drain off any excess grease.
- Add the chopped onion to the skillet with the beef and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
- Stir in the ketchup, brown sugar, Worcestershire sauce, Dijon mustard, chili powder, salt, and pepper. Bring the mixture to a simmer and cook for 5-10 minutes, stirring occasionally, until the sauce has thickened.
- To serve, divide the crispy potatoes among bowls. Spoon the sloppy joe mixture over the potatoes.

You can add shredded cheese or a dollop of sour cream on top for extra flavor.
