Ingredients

For the Crispy Potatoes
  • 1.5 lbs potatoes cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
For the Sloppy Joe
  • 1 lb ground beef
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup ketchup
  • 2 tbsp brown sugar
  • 1 tbsp Worcestershire sauce
  • 1 tsp Dijon mustard
  • 1/2 tsp chili powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper

Equipment

  • Large skillet
  • Baking sheet
  • large bowl

Method

  1. Preheat your oven to 400°F (200°C). Toss the cubed potatoes with olive oil, salt, and pepper on a baking sheet. Spread them in a single layer.
  2. Roast the potatoes for 25-30 minutes, flipping halfway through, until they are tender and crispy.
  3. While the potatoes are roasting, cook the ground beef in a large skillet over medium-high heat. Break it apart with a spoon until browned. Drain off any excess grease.
  4. Add the chopped onion to the skillet with the beef and cook until softened, about 5 minutes. Stir in the minced garlic and cook for 1 minute more until fragrant.
  5. Stir in the ketchup, brown sugar, Worcestershire sauce, Dijon mustard, chili powder, salt, and pepper. Bring the mixture to a simmer and cook for 5-10 minutes, stirring occasionally, until the sauce has thickened.
  6. To serve, divide the crispy potatoes among bowls. Spoon the sloppy joe mixture over the potatoes.

Notes

You can add shredded cheese or a dollop of sour cream on top for extra flavor.
